Well, it seems almost over, and I'm only around half-way through my cruise phase. I suspect I downplayed my bike riding when I first signed up, but this are coming along very nicely.
Once I hit my goal, I suspect I won't change too much, as my wife is still on the cruising phase and I want to support her to stay on it. Still, it should get me a little below where I want to be, so any rebound won't hurt as much.
My wife made this meal to other day. Burgers have become one our favorites, and with the addition of tolerated cheese, pickles, egg and bacon, they remind us of what we're missing out on. Meghs got creative and made 'bacon fries', to complete the experience. Not to mention the coke!
I got a bit inventive on the weekend; I realised that I can have all of the constituents of trifle, or approximations of them So, I tried putting them all together to see what happened. Jelly is jelly; non-sugar or otherwise. For sponge, I tried using diced galette, with fairly pleasing results. Custard is not a problem, the only hurdle remaining was some sort of cream. I tried a few things, but was unable to find a good substitute. I ended up using Dukan Whipped Cream, and whilst it was pretty good, I was sure I could do better.
A few years ago, my wife was on a (nearly) vegan diet (for health reasons). One thing she could eat was egg white, which meant that desserts could only be fruit or meringue. I found a pretty simple recipe for Italian Meringue, one that didn't require any fancy candy thermometers or anything like that.
I decided to try this, substituting Stevia for Sugar. I figured it was worth a shot. Here are the results. In the time it took me to do the dishes, it hardly destablised. As I ate a bowlful, it was clear the stevia hadn't stayed in solution with the eggs.
The results weren't quite what I wanted, but still pretty good none-the-less. I'll give this a whirl when I serve the trifle up for real- it should hold long enough for people to see and be keen to eat!
